Water-based or oil-based gloss?
Modern water-based satinwood and gloss dry quickly, have low odour and stay white rather than yellowing. Oil-based still has its place for some surfaces. I will recommend the best option for your woodwork.
Can you just do the woodwork and leave the walls?
Of course. Refreshing doors, skirting and frames is a cost-effective way to lift a room without a full redecoration.
